Healthy Protein Chocolate Chip Cookies

If you were to ask everyone what their favorite dessert or snack is, I’m sure most people would say cookies! These cookies are packed with protein and the collagen will provide you with healthier skin, stronger bones and working intestines with the collagen. If you are craving chocolate, these are gluten-free, dairy-free and protein-packed–the perfect choice for a guiltless snack. They are super easy to make and best served warm for that creamy, sweet taste of the chocolate chips. The coconut flour provides fiber and healthy fats that our body needs as well, and the nut butter is another heart-healthy ingredient. You won’t be able to stop eating them.

Who doesn't love a classic chocolate chip cookie?! Especially one that has all these benefits, but with the same great taste! The use of nut butter is a genius idea to give the cookie a nice creamy taste - just be careful of your choice of nut butter and keep an eye on the sugar amount. The flax egg in this recipe is perfect if you are vegan plus removes unnecessary cholesterol while giving you a good dose of omega-3's. Healthy Protein Chocolate Chip Cookies

Ingredients

3/4 cup of nut butter/seed butter of choice
1/2 cup of coconut sugar
1/4 cup of coconut flour
1/4 cup of gluten free flour
1/4 cup of gluten free oats
1 flax egg
1 teaspoon vanilla extract
1/4 teaspoon sea salt
1/2 cup of dairy-free chocolate chunks
4 heaping tablespoons (4 scoops) of Further Food Collagen

Instructions

1. Mix all ingredients well until dough forms.
2. Roll into balls and flatten on parchment lined baking sheet.
3. Bake at 350 degrees for 12-15 mins.
4. Serve and enjoy!
