Homemade Grass-Fed Breakfast Sausage with Quick Greens

It’s sometimes difficult to find organic sausages so here’s a recipe to make your own. Freeze the additional patties for another day. Serve with fresh strawberries.

I’m glad Jillian took it upon herself to make her own organic sausage patties. Eating organic is better for the environment, the animals and all of us. Traditional sausages, especially non-organic, can be loaded with artificial colors and flavors. They are also unbearably high in fat and sodium. With only 1 teaspoon of salt to season the meat, these sausages are lower in sodium, but not lacking in the flavor department. This recipe gets a burst of flavor from the sage, thyme, pepper, cumin, garlic and onions. Cutting the beef with turkey also lowers the fat content. Pairing the sausage patties over a bed of greens boosts the fiber, iron, Vitamin A and Vitamin C content. Well done Jillian!

Homemade Grass-Fed Breakfast Sausage with Quick Greens

Ingredients

For the Sausage:

¾ pound grass-fed ground beef or bison (use at least 90% lean)

¾ pound organic ground turkey (use at least 90% lean)

1 clove garlic (minced)

1 teaspoon fresh thyme leaves

1 teaspoon fresh sage leaves (chopped)

1 teaspoon ground cumin

1 teaspoon sea salt

⅛ teaspoon pepper

1 tablespoon cold pressed sesame oil or olive oil

½ yellow onion (finely diced)

1 tablespoon ghee or cold pressed sesame oil (for frying)

 

For the Greens:

1 tablespoon ghee

1 garlic clove (minced)

10 ounces favorite greens like spinach, collard, chard, or kale (washed, de-stemmed and chopped)

1-2 tablespoons bone broth

sea salt and pepper (to taste)

Instructions

For the Sausage:

  1. In a large mixing bowl combine all ingredients except the diced onion and oil.
  2. In a sauté pan heat 1 tbsp of oil to medium-hot.
  3. Sauté the onion until browned and soft.
  4. Add the onion to the sausage mixture.
  5. Form the sausages into round patties.
  6. In a medium size skillet over medium-high heat, add the ghee or sesame oil and brown the patties on both sides. Remove patties to a warm plate.

 

For the Greens:

  1. Wipe out the sauté pan and return to heat.
  2. Add 1 tsp. ghee to the pan with the garlic.
  3. When the ghee is hot, add the greens and a pinch of salt and quickly sauté, tossing gently, about 1 minute.
  4. Add the broth and cover.
  5. Steam for another minute or two until done, but still bright green.
  6. Season with salt and pepper.

 

Suggested pairings:

Place the greens on your breakfast plate and top with the sausage patty. Garnish with the fruit.
