Homemade Healthy Chocolate Collagen Truffles

Ingredients

8 ounces semi-sweet chocolate chunks
½ cup coconut milk (canned full-fat)
2 tablespoons Further Food Chocolate Marine Collagen
¼ tsp vanilla extract
Pinch salt
Optional Toppings:
Cocoa or Chocolate Collagen, sprinkles, crushed walnuts or almonds, coconut

Instructions

  1. Chop chocolate into small pieces. 
  2. Heat milk until it barely begins to boil. Add in chocolate, collagen, salt and vanilla if using, and stir until smooth. 
  3. Refrigerate mixture for at least 2 hours, or until firm enough to scoop out. Roll into balls, and  If desired, roll truffles in.toppings of choice. 
  4. Set on a parchment-lined plate, and refrigerate until ready to serve.
