This keto chicken salad is so easy to make and so satisfyingly delicious you will not be able to get enough of it! We love it with veggie sticks or even by itself, or you can eat it with crackers or in a sandwich!

This chicken salad has me wanting to make lunch right now! Each serving is filled with 27g of protein and only 2g of carbohydrates so if you are into high protein/low carb, this chicken salad is perfect for you! I find the added dill gives the salad a very fresh taste and the crunch of the celery makes this particularly satisfying!

Keto Chicken Salad (Keto, Sugar Free, Low-Carb)

  • Prep Time: 1 hour 30 minutes
  • Cook Time: 15 minutes
  • Servings: 6

Ingredients

1.5 pounds chicken breast
3 ribs celery, diced
1/2 cup mayonnaise
2 teaspoons brown mustard
2 tablespoons fresh dill, chopped
1/4 cup chopped pecans

Instructions

  1. Preheat oven to 450 F degrees and line baking sheet with parchment paper.
  2. Bake chicken breast until cooked throughout, about 15 minutes.
  3. Remove chicken from oven and allow to cool. After completely cooled, cut chicken into bite-sized pieces.
  4. In a large bowl, add chicken, celery, mayo and brown mustard. Toss until chicken is fully coated and ingredients are well-combined.
  5. Cover the bowl with a lid or plastic wrap and refrigerate until chilled, about 1-2 hours.
  6. Serve chilled – topped with fresh dill and chopped pecans.
