I find myself needing an easy go to for breakfast or food on the go and these raspberry almond bars are the perfect way to eat Keto while on the go!

100 g of raspberries are just 52 calories, providing 16% of daily recommended intake of fiber, at 6.5 g and 1.5 g of protein. Their natural sweetness may satisfy your sweet tooth. In addition, the inclusion of 186 mg of potassium aids in maintaining health blood pressure. As a notorious 'health nut', almonds are packed with manganese and vitamin E and each 1/4 cup serving contains the desired monounsaturated fats. By replacing a mere 25% of flour with almond flour it will reduce the number of carbohydrates consumed while providing the desired flakiness in baked goods and in savory applications (e.g. meatballs and coating for fish and chicken).

Keto Raspberry Almond Bars

  • Prep Time:15 minutes
  • Cook Time:35-40 minutes baking
  • Servings: 8

Ingredients

1.5 cups almond flour
1 whole egg
1/4 cup flax seed meal
4 tablespoons Salted Butter (melted)
4oz cream cheese (soft/melted)
1 vanilla bean seeds
1/4 cup raspberries (fresh or frozen)
1 scoop Further Food Collagen Peptides
optional – Polaner’s high fiber sugar free raspberry jelly

Instructions

  1. Pre-heat oven to 350
  2. Combine all ingredients except raspberries in a bowl until thoroughly blended
  3. Put mixture in a shallow nonstick bake pan that is coated with butter or coconut oil (9×6 is ideal)
  4. Once mixture is in pan break up raspberries and place on top
  5. Bake for 30-45 minutes depending on dish depth (they will be soft in the middle)
  6. Remove from oven and cut into 8 even squares
  7. Let cool, top with 1/2 teaspoon sugar free jelly when eating.
