Craving the flavors of the ocean, I dug out a tin of mackerel and a pack of nori sheets from my cupboard. I like using miso instead of mayo to incorporate more flavor plus reap the health benefits of fermentation. This is a super quick lunch or snack that you can make in 10 minutes or less!

Mackerel are a great source of omega-3 fatty acids, vitamin D, calcium. Nori, and other seaweeds, provide iodine that help support thyroid function, critical in managing Hashimoto’s.

Mackerel Salad Nori Wraps

Ingredients

4 ounce tin mackerel (packed in water, no salt)

1 teaspoon white miso paste

1 teaspoon sesame seeds

1 teaspoon sesame oil

lemon or lime juice to taste

2 large sheets nori

1 tablespoon roasted leeks (optional)

handful of sprouts (optional)

pickled or fermented veggies (optional)

Instructions

  1. Flake the mackerel with a fork.
  2. Stir in miso, squeeze of citrus of choice, sesame oil, and sesame seeds.
  3. Place nori sheets on plate (use 2 to prevent leakage).
  4. Layer mackerel along with optional toppings in center of nori.
  5. Roll up and eat.
