These quick and easy matcha muffins made with Superfood Matcha are so simple to prepare and more importantly, delicious!

These matcha muffins are of course loaded with antioxidants from our Superfood Matcha powder and they are so rich and filling from the almond butter! Each muffins comes in at around 150 calories with only 9g of carbohydrates and 5g of protein thanks to the collagen peptides so these muffins are a great on-the-go breakfast option that will be as satisfying as they are delicious!

Ingredients

2 eggs
1/4 cup honey (or maple syrup, agave, etc.)
2 tablespoons Further Food Superfood Matcha
1/4 cup melted and cooled coconut oil
1/4 cup almond milk
1/4 cup almond butter (or any nut butter of your choice)
3/4 cup almond flour
1/2 cup coconut flour
1 tablespoon coconut sugar
1 scoop Further Food Collagen Peptides
1.5 teaspoons baking powder
1/2 teaspoon cinnamon
Optional chocolate topping: dairy free dark chocolate with 1/2 tbsp coconut oil

Instructions

  1. Preheat oven to 350 F.
  2. Mix together all wet ingredients until well combined.
  3. Add dry ingredients to wet ingredients and bake for about 12-15 minutes.
