These quick and easy matcha muffins are so simple to prepare and more importantly, delicious!

Quick and Easy Matcha Muffins (Gluten-Free, Low-Carb)
1/4 cup honey (or maple syrup, agave, etc.)
2 tablespoons Further Food Mindful Matcha
1/4 cup melted and cooled coconut oil
1/4 cup almond milk
1/4 cup almond butter (or any nut butter of your choice)
3/4 cup almond flour
1/2 cup coconut flour
1 tablespoon coconut sugar
1 scoop Further Food Collagen Peptides
1.5 teaspoons baking powder
1/2 teaspoon cinnamon
Optional chocolate topping: dairy free dark chocolate with 1/2 tbsp coconut oil
- Preheat oven to 350 F.
- Mix together all wet ingredients until well combined.
- Add dry ingredients to wet ingredients and bake for about 12-15 minutes.
