Growing up in a Mexican family has it’s perks. Thanks to my mom, this recipe has always made me feel like I’m in paradise. Don’t be afraid of the serrano pepper, it spices things up very nicely!

Adding mangos to traditional salsa not only offers a surprising twist flavor-wise, it also boosts nutrient and antioxidant consumption. Mangos are full of vitamins A and C, potassium, fiber and free-radical fighting flavonoids. Studies have indicated that they are helpful in the prevention of colon and breast cancers. Serving with flax-seed enriched chips, or over a salad with a drizzle of olive oil provides a boost of fat to help your body absorb the vitamin A even more effectively!

Mexican Mango Tomato Salsa

Ingredients

1 mango (diced)

2 roma tomatoes (diced)

½ onion (diced)

½ serrano pepper

2 limes

salt to taste

Instructions

  1. In medium-sized bowl, combine mango, tomatoes, onion and pepper.
  2. Squeeze limes over the top and mix.
  3. Add salt to taste.

 

Suggested pairings:

Serve with your favorite tortilla/flaxseed chip. Or have with romaine lettuce as a lettuce cup!
