I’m really excited to share these no-bake doughnut holes with you because they’re so incredibly yummy! But the best part is that they only have four ingredients, take only ten minutes to prepare and are a NO-BAKE recipe, how easy is that? They’re dairy-free and gluten-free, with no added sugar, and they taste like vanilla caramel melting in your mouth!

This is the best kind of dessert you could feed your family. If you look at the ingredients when you buy anything packaged at the store, they usually have at least several ingredients that can’t even be pronounced let alone that should be put in your body.

Further Food Commentary:

Not only do cashews contain a lower fat content than other nuts, about 80% of their fat is the healthy kind, called unsaturated fatty acids. Also, a ¼ cup of cashews can help one reach their Daily Value of copper, phosphorus, manganese and magnesium.

Moderation with dates is key, as they're full of sugar; however, in small amounts, they're rich in fiber, energy and sugar while aiding in issues such as constipation, anemia, need for weight gain and diarrhea.

The dietary fiber helps move waste through colon, preventing the build up of LDL (bad) cholesterol. They're also rich in vitamin A and K, which protect the eyes, maintains healthy skin and metabolizes bones.

Ingredients

2 cups fresh medjool dates (pitted)

1/3 cup cashews (soaked overnight in purified water drained and rinsed)

1/2 teaspoon vanilla powder*

1 cup shredded coconut (1/2 cup set aside to cover the doughnut holes in)

*I used Madagascar vanilla powder and it really makes the difference! If you don’t have it, you can use a vanilla bean or pure vanilla extract but it may not be as vanilla flavored with the extract.

Instructions

1. Mix all the above ingredients in a food processor and blend until it becomes a coarse crumbly mix. Be careful not to over process.
2. Scoop out mix onto a plate and roll into tablespoon size balls. Cover in coconut. Enjoy!

    OMG. These just changed my life.
    The hardest part about this recipe was the grocery shopping to get the ingredients. From there, it’s the easiest, quickest dessert I’ve ever made in my whole life and very worthy of bringing to a party or gathering. They are DELICIOUS.
    But I’m a sugar-detox coach, so the large amount of dates made me twitch a little. To that end, I decided to switch up the ratio of dates and cashews, so I did 1 cup of dates to 3/4 cup of salted cashews, and 3/4 cup of shredded coconut. I didn’t have vanilla powder so I used regular vanilla extract. I also coated half of them in cocoa powder to change it up. They made 12 perfect, perfect little round treats!
    I am keeping them in the freezer to pull out as needed — I can’t leave these things around!!! They are wonderful!
