Nourishing Apple Cinnamon Collagen Crumble

Ingredients

Base:
3 apples
1 tablespoon cinnamon
Avocado Oil Spray

Crumble:
1 cup organic coconut flour
2 scoops Further Food Collagen  
1 tablespoon organic resistant potato starch
1 tablespoon organic vanilla extract
3/4 tablespoon organic liquid monkfruit
4 pasture-raised eggs
1/4 cup melted ghee

Instructions

  1. Preheat oven 350F.
  2. Make base: Slice apples very thin. Spray avocado oil on base of pie dish. Layer apple slices with lots of cinnamon in between. Set aside
  3. Make crumble: Mix dry ingredients. Add liquid ingredients. Mix until looks like crumbly and dry.
  4. Place crumble on top of apple mixture.
  5. Bake 45 minutes. Enjoy as is or serve with unsweetened coconut yogurt or creme fraiche.

    Hi I am 62 yrs old in May I have had type 1 for 36 yrs. first 10 15 yrs totally undercontrol with a lot of work and diet. It got to be to much for me as I had a farm I ran on my own plus 2 sons and when they were alittle oler I homescooled them. I have been out of control sugurs up in 20s most of the time. just get busy and don’t take fast acting. By supper I really high haven’t slept because of this for months ,maybe 4 years. I lost my mom 4 yrs ago didn’t get to say good bye. My marriage has fallen aprt as he feels this is all my responsiability. so he contineus to drink or eat unhealthy when ever. I’m not a very nice person as I felt if I was going to prepare good nutritious meals would be great for him to join in. I find it easier to be on my own. I have contiontration for about 20 min then I get sidetracted ….. or I eat well for 2 days then back and eat a bag of choc chips its horriable. I don’t frink or smoke. I haven’t exersised for almost 4 years so all of my mussel is gone. I’m 128 of flabby .My skin is scaling off my legs are blue vains . I have trouble with my circulation . My eyes are bad had catract surgery on one eye but it isn’t doing to well. Im taking 17 slow acting in the morning as I usually wake up at 8 . and try to remember to take 4or so fast when I eat. Theres no crap food in my house I don’t eat any prossed food. I’ve just slowed down with dairy/ I like your recipes All I like is if someone would help me point blank right out 5 days of meals . simplur the better. I used to clean up real well but then Id go to low and end up in the hospital. I also have low thyroid . I have never gone to the bathroom the same in 2 days. always constipated and have to take stuff to go. I have a real hard time with any small seeds specially flax. o boy I feel that I need to put myself in a rehab to get cleaned up but no where around here . plus no one to take care of my dogs. so need to do this on my own.
