I don’t usually use oat flour as my go to flour to bake, but that’s all I had in my kitchen. This recipe is super easy to make and I promise you it is delicious. It is also good for you since it only has few ingredients.

From the boiled dehydrated sap of the coconut palm comes coconut sugar! It has the same ratio of carbohydrates and calories in comparison to the standard granulated sugar. The mood booster B vitamin inositol is found in coconut sugar and with trace elements of vitamin C, potassium, phosphorous, magnesium, calcium, zinc, iron and copper. One can feel a bit 'better' about adding coconut sugar than aforementioned granulated.

Oat Flour Banana Bread

  • Prep Time:10 minutes
  • Cook Time:20 minutes

Ingredients

1 1/2 cups oat flour
2 ripe bananas
2 eggs or flax eggs
1 tablespoon of melted coconut oil
1 tablespoon of coconut sugar
1 teaspoon of cinnamon powder
1 teaspoon of baking powder

Instructions

  1. Preheat oven to 350’F / 180’C
  2. Mashed the bananas with a fork until you get a soft puree. Add the two eggs or flax seed eggs, coconut oil, coconut sugar and mix well.
  3. In a separate bowl, add the oat flour, cinnamon powder and baking powder. Mix well until combined.
  4. Mix the wet and dry ingredients until you get a soft batter.
  5. Grease your baking pan with your favorite oil and pour the mixture in. Add in cut bananas, and crushed walnuts to decorate.
  6. Bake at 350’F / 180 ‘C for 30 minutes.

    I just made this for the grandkids. I used brown sugar. I also added walnuts. They ate them up. I will definately be making them again.

    You posted 2 different cook times- it says 20 minutes at the top and 30 minutes in the directions which is what I followed, I added 1/4 cup cacao powder and chocolate chips to satisfy my husbands sweet tooth and it did the job.
