Paleo Chocolate Chip Cookie Skillet

Ingredients

2 cage-free organic eggs, room temperature
½ cup erythritol (or other low carb sweetener like xylitol or monk fruit)
½ cup coconut oil
2 cups almond flour
1 scoop Further Food Collagen Peptides
¼ teaspoon ground cinnamon
½ teaspoon sea salt
½-1 cup 100% cacao unsweetened dark chocolate chips for baking
1 teaspoon. pure vanilla extract
Flaked sea salt, for topping

Instructions

  1. Preheat oven to 350 F.
  2. In a large mixing bowl, whisk together eggs, erythritol and coconut oil until smooth and creamy.
  3. Add in almond flour, Collagen Peptides, ground cinnamon, vanilla and sea salt and whisk until well-combined.
  4. Fold in unsweetened dark chocolate chips.
  5. Pour cookie batter into a 10-inch cast iron skillet.
  6. Bake for 20 minutes and let cool for at least 5 minutes.
  7. Top with flaked sea salt, if desired.
