This peppermint chocolate fudge is sugar-free, paleo, keto, gluten free & DELICIOUS. Perfect for a holiday treat and even as gifts!

Each tablespoon of unsalted cashew butter contains 94 calories, 12% of daily value (DV) of fat and 8% of DV saturated fat, 6% DV of protein, but limited amounts of carbohydrates and fiber. Additionally, each tablespoon provides 10% of recommended dietary allowance (RDA) for magnesium for men 30 years old and up and 13% of RDA for women 30 years and older. Magnesium is helpful to healthy muscles and neurological, metabolic and immune function. It helps maintain steady heart rhythms, normal blood pressure levels and stabilize blood sugars. Paleo Peppermint Chocolate Fudge

  • Prep Time: 5 minutes
  • Cook Time: 10 minutes + freezing time
  • Servings: 12

Ingredients

1/4 cup cashew butter, slightly heaped
2 tablespoons maple ghee
1 tablespoon cacao powder
Couple pinches of pink salt
2-3 tablespoons sugar-free sweetener
1/4 cup + 2 tablespoons heaped, paleo-friendly sugar free or dark chocolate chips
1/4 cup + 2 tablespoons melted coconut butter
1/4 cup Further Food Collagen Peptides
1/2 teaspoon peppermint extract
2 tablespoons MCT oil

optional toppings
2 tablespoons coconut butter
1-2 teaspoons sugar-free sweetener
Crushed candy canes *optional (not recommended for strict keto!)

Instructions

  1. Melt all ingredients over low heat, adding the peppermint extract at then end!
  2. Pour into silicon tray or a pan or dish lined with parchment paper and chill while you make the topping!
