I’m telling you, they’re one of those cookies that are extremely hard to resist, especially when those aromas start flooding your home. Full of rich, bold peanut butter flavor, they’re sure to satisfy any peanut butter craving. I like my peanut butter cookies to have slightly crisp edges and a creamy, soft inside. These cookies are definitely a crowd pleaser. They came out beyond good, perfect actually. Nope, who am I kidding? They’re just dangerous at this point… as I continue to scarf them down. Peanut Butter Cookies with Caramel Drizzle

Ingredients

PEANUT BUTTER COOKIES:

1 cup unsweetened natural peanut butter

1/2 cup almond flour

3 tablespoon coconut flour

2 eggs

1/2 cup raw organic honey

1 teaspoon pure vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon cinnamon

 

CARAMEL:

1 cup canned coconut milk, full fat

1 tablespoon coconut oil

1/2 cup raw organic honey

1 teaspoon pure vanilla extract

1/2 teaspoon sea salt

 

Instructions

  1. Get your caramel sauce started first by combining the coconut milk, coconut oil, honey and vanilla extract in a sauce pan over medium-high heat.
  2. Bring to a boil, but keeping a close eye as it can quickly boil over, then immediately lower the temperature, keeping the caramel sauce at a light simmer. Simmer for about 25-30 minutes, stirring occasionally.
  3. Preheat oven to 350F degrees.
  4. In a food processor, combine all of your cookie ingredients together until the dough starts to form a ball.
  5. Line a baking sheet with parchment paper and place one-inch balls evenly apart.
  6. Flatten each ball with the back of a fork slightly to make the lines in the middle.
  7. Bake for about 10-12 minutes and cool for 5 minutes.
  8. Drizzle caramel sauce over cookie and indulge!
