Not only do cashews contain a lower fat content than other nuts, about 80% of their fat is the healthy kind, called unsaturated fatty acids. Also, a ¼ cup of cashews can help one reach their Daily Value of copper, phosphorus, manganese and magnesium. Those that are lactose intolerant are able to sub coconut milk for cow's milk. A 100 ml serving of coconut milk contains 154 calories, 1.4 g protein, 15 g fat with 13.2 g of it saturated and 3.4 g carbohydrates. Thinner coconut milk consistencies are best for curries and soups while thicker version do well in desserts and rich sauces.

Pumpkin Cheesecake Collagen Bars

  • Prep Time:5 minutes
  • Cook Time:20 minutes freezing time
  • Servings: 20

Ingredients

Crust:
1/2 cup walnuts
1/2 cup pecans
1/2 cup almonds
4 dates
1/2 cup coconut oil

Filling:
1 cup organic puréed pumpkin
1/2 cup soaked cashews
1 cup full fat coconut milk
2 scoops Further Food Marine Collagen
2 teaspoons vanilla extract
2 teaspoons cinnamon
2 teaspoons pumpkin pie spice
2 tablespoons maple syrup

Instructions

  1. In a food processor, mix together all ingredients until combined. Press into a dish and freeze while you make the filling.
  2. Blend together all ingredients until smooth, Pour over crust, drizzle coconut butter on top and freeze until solid.
  3. Leave out for about ten minutes to thaw cutting into bars and serving. Enjoy!

    where’s the 51g sugar from? 2T maple syrup is only 48g. if the recipe serves 4, where is the other 156g of sugar coming from?

    The dates only add an additional 18g for all 4.
