Pumpkin Cheesecake Collagen Bars
1/2 cup walnuts
1/2 cup pecans
1/2 cup almonds
1/2 cup coconut oil
1 cup organic puréed pumpkin
1/2 cup soaked cashews
1 cup full fat coconut milk
2 scoops Further Food Marine Collagen
2 teaspoons vanilla extract
2 teaspoons cinnamon
2 teaspoons pumpkin pie spice
2 tablespoons maple syrup
- In a food processor, mix together all ingredients until combined. Press into a dish and freeze while you make the filling.
- Blend together all ingredients until smooth, Pour over crust, drizzle coconut butter on top and freeze until solid.
- Leave out for about ten minutes to thaw cutting into bars and serving. Enjoy!
