What is a better way to start the weekend than with pancakes. I love being able to treat myself but also having it be healthy and filled with amazing ingredients, especially with the Further Food Collagen. I literally have been adding it to everything and it really helps with anti-aging, weight loss, bone, joints and gut health.

Pumpkin Pancakes (Dairy-Free, Gluten-Free, Low-Fat)

Ingredients

Pancake Batter:
1 1/3 cup Birch Benders pumpkin spice pancake and waffle mix
1 scoop Further Food Collagen Peptides
1 egg white
Dash of pumpkin pie spice
2/3 to 1 cup of water
1 teaspoon melted coconut oil (for cooking)

Toppings (optional):
Siggis pumpkin & spice yogurt
Purely Elizabeth pumpkin cinnamon granola
pumpkin seeds
banana, cut into coins
pumpkin pie spice
pure maple syrup

Instructions

1. In a bowl combine all the ingredients for the pancake batter.
2. Stir until well combined.
3. Prep pan with coconut oil.
4. Pour batter on pan, cook on medium heat, flip when bubbles appear.
5. Continue to cook pancakes until all batter is used.
6. Put on a plate, add toppings and enjoy!
