This recipe was inspired by having waaaaaaay too many pumpkins on hand and coming up with creative dishes to consume them. This is a nutrient packed smoothie that keeps me satisfied and energized. I then discovered it was also delicious with cocoa powder!

Although pumpkin and raspberry are the major players in this surprising combination of ingredients, we should give credit to the addition of maca powder and bee pollen to this vitamin rich smoothie.

Maca powder is one of my favorite smoothie ingredients. Maca is a plant native to the Andes Mountains in Peru, a root that has been used in traditional medicine for thousands of years. Maca is believed to help regulate the endocrine system, particularly in mediating symptoms of menopause, menstrual problems, and female hormone imbalance.

Bee pollen is literally the pollen that collects on bees, so you may want to avoid it if you are allergic to pollen, bees or honey. Otherwise, bee pollen contains vitamins, minerals, fats, and protein, and may act as a natural energizer or ergogenic aid (enhancing athletic performance). Another belief is that bee pollen may actually help to improve allergies.

Ingredients

1 cup pumpkin puree

1 cup frozen raspberries

½ cup coconut milk (or almond milk or green tea)

2 tablespoons coconut oil

2 dates

¼ teaspoon cinnamon

¼ teaspoon maca powder

½ teaspoon bee pollen

optional: 1 tablespoon raw cocoa powder

Instructions

  1. Combine all ingredients in a blender and blend until smooth.
  2. Add filtered water as needed for desired thickness.

    I made a version of this today with frozen blueberries instead of raspberries, leftover garnet yam instead of pumpkin puree, and hemp milk instead of coconut milk… it was SO good! I was satisfied for hours and had plenty of energy to keep me going!
