Sprouted nuts and seeds are a powerhouse of nutrition and perfect to increase the benefits of this treat. Sprouted nuts and seeds increased mineral absorption and can increase digestion. Corydceps are a type of fungi that have been shown to have many benefits. Though many of cordyceps benefits are still being researched, there is evidence that it increases immune function and has anti-aging effects.

Ingredients

BASE
2 cups sprouted nuts + seeds (i used almonds, walnuts and sunflower seeds)
1/2 cup rolled oats
1 ripe spotty banana
1 teaspoon cinnamon
2 teaspoons cordyceps + ashwagandha
pinch of pink salt

BERRY CREAM
1 large can cannellini beans
1/4 cup coconut butter
1 tablespoon almond butter
1/2 cup mixed raspberries and blueberries
2 scoops Further Food Vanilla Collagen Peptides
2 teaspoons vanilla extract

Instructions

  1. Mix all base ingredients together and put into silicon mold.
  2. Blend cream ingredients and spread over the base.
  3. Freeze for an hour before serving.
