Raw, Gluten-Free and Vegan Key Lime Pie

If you’ve never tried raw desserts, this recipe is the perfect place to start. Between the nuts, dates, coconut oil and limes, this dessert is tasty and 100% satisfying! I made this pie for my dad’s birthday, and although he isn’t always a fan of my healthy baking, he would not stop talking about this dessert for weeks.

What a great low carbohydrate way of having a tasty crust of assorted nuts. Cashews as a filling are slightly lower in calories than other nuts. They are mineral rich (magnesium, calcium, phosphorus, potassium, copper and selenium) and full of protein ( 5 g per ounce of nuts). Cashews also have about 1 gram of fiber per ounce.

Raw, Gluten-Free and Vegan Key Lime Pie

Ingredients

Crust:
1 cup pitted dates (soaked overnight if dry)
1/2 cup almonds, chopped
1/2 cup walnuts, chopped
1/4 cup shredded coconut
1 tablespoon coconut oil

Filling:
2 cups raw cashews
1/3 cup melted coconut oil
1/2 cup maple syrup
3/4 cup lime juice (approximately 8-9 limes)
1 teaspoon vanilla extract
1 teaspoon matcha powder

Instructions

1. To make the crust, combine all the ingredients in a food processor until they stick together.
2. Once the crust is sticky, press it down into a 9 inch glass pie dish, making sure to cover the bottom and sides.
3. Blend the filling ingredients in a food processor until soft and creamy.
4. Pour the filling over the crust and place in the freezer for at least 3 hours (or let it sit overnight).
5. Take the pie out of the freezer 20 minutes prior to eating.
