Avocados are a great addition to this soup to give it a creamy, smooth texture without having to add cream. They also contain a good deal of fiber, folate (and host of other B-vitamins), Vitamins C, E, K, and potassium, as well as antioxidants and other cancer-fighting properties. They are also beneficial for helping lower "bad" LDL cholesterol while increasing "good" HDL cholesterol. Additionally, their high omega-3 fatty acid profile helps the body better absorb the vitamins A, E and K and powerful carotenoids found in the other vegetables (and fresh herbs!) in this recipe!

Raw Green Soup

  • Prep Time: 3-5 mins + (6-12 hours to pre-soak almonds)
  • Cook Time: 0 mins
  • Servings: 1

Ingredients

1 tomato

1 small zucchini

¼ onion

¼ cup cilantro

¼ cup parsley

2 cups spinach or other greens

¼ cup almonds (soaked overnight and drained)

1 avocado

3 tablespoons lemon juice

Himalayan salt (to taste)

 

Instructions

  1. Combine all ingredients in blender.
  2. Blend until smooth.
  3. Enjoy!
