Roasted Cauliflower Steaks

Cauliflower is such a healing food for mental and physical health. Part of the brassica family, this food is rich in fiber and antioxidants which will protect your cells from harmful free radicals and inflammation. We now know inflammation is the number one cause for mental health conditions like anxiety, depression and fatigue. Spiced with turmeric, my go-to anti-stress spice, this is the dish you want to eat when feeling more anxious than usual. Curcumin, its active ingredient, improves mood, decreases stress and changes the corresponding brain chemistry, protecting the hippocampus because stress can deactivate the hippocampus.

Roasted Cauliflower Steaks

Ingredients

1 large cauliflower

3 tablespoons avocado oil

1 tablespoons garlic powder

½ tablespoon turmeric powder or Further Food Superfood Turmeric

½ tablespoon smoked paprika

Pinch of black pepper

Sea salt

Handful of arugula and spinach

Extra virgin olive oil and lemon (use as salad dressing)

Instructions

  1. Preheat the oven to 400F.
  2. Cut the cauliflower in florets and give them a good drizzle of avocado oil.
  3. Massage the florets with the spices (turmeric, pepper, paprika and sea salt).
  4. Bake for 45min to 1 hour until tender but crispy.
  5. In a bowl, mix the leafy greens with extra virgin olive oil and a fresh squeezed lemon. Mix well and serve as a base.
  6. Top your greens with the roasted cauliflower steaks and enjoy! If you want you can add a spoonful of tahini. This will give the whole dish a creamy texture and a perfect healthy balance of mood-boosting Omega 3 fatty acids and protein.
