Skinny Vanilla-Bean Protein Cake Bars

If you lift weights, you probably have an obsession with protein too. So recently, I’ve been experimenting. And this . . . this is my favorite recipe!

Further Food Nutritionist Commentary:

Under 150 calories apiece with 10 grams of sustaining protein and 13 grams of quick-energy carbohydrate, these vanilla bean bars would be a smart pre-workout or post-workout bite. Each bar is only 5 grams of fat and 1 gram of sugar, and provides more than 10% of your daily needs for calcium, making these a satisfying snack you can feel good about.

Note: Replace 1/4 cup of the all-purpose flour with white whole wheat or whole wheat pastry flour to add fiber and boost the vitamin/mineral content, or replace the AP entirely with your favorite gluten-free flour blend. If desired, cut a handful of calories and a bit of fat by eliminating the glaze -- try sprinkling the top with cinnamon or nutmeg instead!

Skinny Vanilla-Bean Protein Cake Bars

Ingredients

Cake recipe:
3/4 cup all-purpose flour
1/2 cup vanilla protein powder
1/3 cup Truvia Baking Blend
2 teaspoons baking powder
pinch of salt (optional)
4 tablespoons liquid egg-whites
1/2 cup unsweetened almond milk + 1/2 tablespoon distilled white vinegar
1/3 cup fat-free ricotta
2 tablespoons I Can’t Believe It’s Not Butter, “Lite” (or butter of choice, or coconut oil)
1.5 teaspoons vanilla extract

 

Glaze ingredients:
2 tablespoons I Can’t Believe It’s Not Butter, “Lite”
1/2 cup vanilla protein powder
1/2 teaspoon vanilla bean paste
pinch of salt
1/4 cup fat-free half-and-half

Instructions

  1. Preheat oven to 350F.
  2. Mix together all dry ingredients for cake, followed by wet ingredients, stirring until combined.
  3. Lightly grease a baking dish, about 8 X 8 and pour cake batter into pan and bake for approximately 29 – 31 minutes, or until batter has baked through.
  4. Mix together glaze ingredients while cake is baking.
  5. One finished baking, remove cake from oven and top with glaze. Allow to cool before diving into 9 pieces. Enjoy!
