I love warming, spicy soups – especially the ones that take no time making. This one contains slow cooked chicken, which is easy on the stomach and absolutely perfect for a rainy day.

The chicken and vegetables add a lot of great healthful nutrients and are typically easy to digest. The cumin, chili powder, and cayenne pepper are all potentially very irritating to the digestive track. If they don't bother you, then eat them! They have a lot of healthful things to offer! But be cautious, as they can irritate any part of the upper or lower GI track.

Slow Cooked Chicken Tortilla-less Soup

  • Prep Time:5 minutes
  • Cook Time:20 minutes
  • Servings: 4

Ingredients

2-3 cups veggies of choice, e.g. carrots, spring onion, squash, peppers (chopped)

1.5 liters (about 6 1/3 cups) chicken stock or water

1 pound cooked chicken

1 can chopped tomatoes
2 limes (juiced)
1 teaspoon cumin
1 tablespoon chili powder (if you like it hot)
1/2 teaspoon cayenne pepper (if you like it hot)

Fresh cilantro for garnish

Instructions

  1. Bring vegetables and stock/water to a boil.
  2. Add tomatoes and spices.
  3. Let simmer for about 10 minutes.
  4. Add chicken.
  5. Bring to a boil again.
  6. Let simmer for 5 minutes.
  7. Top with fresh cilantro and serve.
