Requiring only a few minutes of prep time, this hearty, yet low calorie crockpot soup will keep you satisfied without heating up the house or weighing you down. Leaner turkey benefits from this type of cooking to lock in moisture and tenderness, and a variety of spices bump up the flavor in place of added salt or fat. Per serving turkey offers a small amount of iron, which is better absorbed and utilized by the body thanks to vitamin C found in tomatoes, red potatoes and other veg.

Slow Cooker Turkey Vegetable Soup

  • Prep Time:10-15 minutes
  • Cook Time:High for 3-4 hours
  • Servings: 8

Ingredients

1/2 pound ground turkey
1 can/12 ounces organic diced tomatoes
1 bag organic frozen vegetables
1 small onion (chopped)
2 garlic cloves (chopped)
1 teaspoon Pink Himalayan salt
1/2 teaspoon freshly ground pepper
1 tablespoon organic italian seasoning
1 bay leaf
2 medium red potatoes (chopped)
1 box organic chicken broth

Instructions

1. Place the turkey meat at the bottom of your slow cooker, then add all of the ingredients on top of it.

2. Run it on high for a few hours, making sure that the turkey is fully cooked before you serve it.

3. Also use a spatula to break up the turkey meat into bite-sized pieces. Turn the heat down to low once the turkey is cooked. Enjoy!
