My new obsession is sweet potato mixed with crunchy almond butter. It’s so delicious and a perfect snack. One day instead of just topping my sweet potato with the almond butter, I warmed both in the microwave and then mixed them together until they made a spread. I decided that it would probably taste amazing on top of apple slices, and I was right! I also added Cacao Nibs to give it a little extra crunch. It’s the perfect snack!

Ingredients

1 apple
1 tablespoon almond butter
3 ounce sweet potato (cooked)
1 teaspoon cacao nibs

Instructions

1. Put your sweet potato in a bowl and heat it in the microwave for about 30-40 seconds or until it is warm. If you are using a microwave sweet potato it takes about 7 minutes for them to cook.  But, if you already have pre-baked sweet potato it only takes about 30-40 seconds to reheat.
2. When it’s done, take your almond butter and put it on top of the sweet potato and microwave for another 10 seconds.
3. Take the mixture out of the microwave, add your cacao nibs and mix everything together.
4. Wash your apple and cut it into round slices.
5. Spread the mixture on your apple slices and munch away!
