Who doesn’t love pancakes!? Unfortunately being gluten free, I can’t eat the same yummy pancakes everyone enjoys from the diner so I am always looking for new ways to recreate this meal. I normally just do a banana and 2 eggs but I tried something new and absolutely love it!

High in fiber, protein, and healthy fats, yet under 300 calories, these oatcakes should fill you up and give you the fuel you need to take on the day. To keep the sugar content low, use unsweetened applesauce and load up on the cinnamon for extra flavor.

Stacked Strawberry Oatcakes

Ingredients

1 cup gluten free rolled oats
2 egg whites
1/2 teaspoon cinnamon
1/2 cup strawberries
1/4 cup apple sauce
1 tablespoon coconut oil

Instructions

1. Combine oats, egg whites, and cinnamon in a bowl and mix together evenly.
2. Grease your pan with a little coconut oil and pour in your mixture into little circle pancakes. (Should make about 3). Cook your oatcakes evenly on both sides
3. Slide your strawberries and measure out desired amount of apple sauce.
4. Start stacking your oatcakes (Oatcake, apple sauce, strawberry) and continue until you get to the end of your stack!
5. Enjoy!
