Stacked Strawberry Oatcakes

Print

Who doesn’t love pancakes!? Unfortunately being gluten free, I can’t eat the same yummy pancakes everyone enjoys from the diner so I am always looking for new ways to recreate this meal. I normally just do a banana and 2 eggs but I tried something new and absolutely love it!

Further Food Nutritionist Commentary:

Jennifer's creation is actually a great breakfast idea to start your day. High in fiber, protein, and healthy fats, yet under 300 calories, these oatcakes should fill you up and give you the fuel you need to take on the day. To keep the sugar content low, use unsweetened applesauce and load up on the cinnamon for extra flavor.

These look really interesting. I’m not gluten free but I think I will try these anyways! Do you ever mix chocolate chips into the batter?
