I’m always looking for a flavorful meal that won’t take me long to cook. This recipe is an option when I want something delicious without spending a ton of time and effort. There are 6 accessible ingredients that are easy to find and easy to manage. Six!

The thing I like best about this recipe is that it mimics the Italian flavors, but instead of tomatoes I replaced it with berries. Sometimes tomatoes in a chicken dish make me want cheese, but by adding the berries it eliminates that craving. So there’s a sweet and sour taste between the berries and vinegar. It’s so simple to make during a weeknight or busy weekend.

The chicken is best grilled because the char pairs well with the sweetness of the berries. Pan frying it works well too.

Further Food Commentary:

The olive oil in this recipe gives the dish quite a good deal of monounsaturated fats. These are the best for your cholesterol, because they raise HDL, the type of cholesterol that is beneficial and helpful in fighting heart disease. Olive oil also supplies oleic acid, which most of us don't get enough of in our diet.

Strawberry Basil Grilled Chicken

Ingredients

2 8 ounces chicken breasts (skineless)
8-10 large strawberries (chopped)
3 tablespoons balsamic vinegar
6 large basil leaves (chopped)
2 1/2 tablespoons olive oil
sea salt (to taste)

Instructions

  1. Place 2 tablespoons balsamic vinegar, 2 tablespoons olive oil and salt with chicken in a ziplock bag.
  2. Let sit for anywhere from 5 minutes to 5 hours. You can even skip this step and grill the chicken with light Italian seasonings.
  3. When ready, place on grill for at least 5 minutes each side depending on thickness.
  4. Meanwhile, combine strawberries and basil in small bowl with 1 tablespoon vinegar and 1/2 tablespoon olive oil.
  5. Let the fruit and oil & vinegar sit in a bowl until chicken is done cooking. The strawberries will break down and get soft in the vinegar.
  6. Remove chicken from the grill and add strawberry chutney on top of chicken. Sprinkle fresh basil on top as garnish.
