Summer is all about simplicity, and less is definitely more with this easy salad. Fresh strawberries and arugula need nothing more than a bit of fresh mint, thyme, and rosemary to become a satisfying side dish. Toss in a handful of protein- and magnesium-rich pistachios and salad is served! To make it a meal, add some grilled chicken or tofu and a hearty grain such as farro or barley.

Ingredients

For the vinaigrette:
3 tablespoons champagne vinegar
1 tablespoon honey
½ teaspoon sea salt
Pinch black pepper
½ cup extra virgin olive oil
1 tablespoon chopped mint
1 teaspoon chopped thyme
½ teaspoon chopped rosemary

For the salad:
½ pint fresh strawberries (washed, stem removed and thinly sliced)
½ small red onion (cut into 1/8-inch slices)
1/2 cup pistachios (roughly chopped)
5 ounces wild arugula

Instructions

  1. For the vinaigrette, whisk together champagne vinegar, honey, sea salt, and black pepper.
  2. Slowly stream in olive oil while whisking.
  3. Stir in mint, thyme, and rosemary; set aside.
  4. For the salad: Combine strawberries, onions, pistachios, and arugula in a bowl; toss with vinaigrette and serve.
