I love Japanese sweet potatoes. They are so much more flavorful than regular sweet potatoes. I made this Japanese Sweet Potato and Black Bean Nacho recipe when I was trying to figure out what to do with some leftover beans and veggies. Instead of making my usual bowl with all the ingredients, I layered everything and then made a delicious “cheese” sauce that has a nice earthy flavor thanks to the Superfood Turmeric and nutritional yeast.
I love trying to take comfort food dishes and putting a little healthier spin on it. By using nutritional yeast for the “cheese” sauce, I was able to still get that great rich, nutty and creamy cheese flavor without the dairy! Plus, the nutritional yeast also added some extra protein, vitamins, minerals and antioxidants to the dish!
I had so much fun making this recipe, and even more fun eating it! Unlike typical nachos, with tortilla chips and tons of cheese, this recipe didn’t leave a heavy feeling in my stomach after I ate it. This dish totally fulfilled my nacho craving and didn’t leave a bad feeling in my stomach afterward. It was a win-win!
