I love making waffles or pancakes on Sunday Morning. Took my go-to 4 ingredients sweet potato waffle and gave it a chocolate twist with some Further food Chocolate Collagen. Packed with protein and flavor to start this day off right. The chocolate and peanut butter combo is one I’ll never ger over. Seriously a match made in heaven. I just tried the chocolate collagen this morning and I’m already obsessed! I added it to my coffee and then was already planning on making these waffles so I made it an impromptu decision to add it in- best decision I’ve made all weekend. The collagen has only 4 ingredients and low sugar but still has the best chocolatey taste. You wouldn’t even know that it has health benefits too. I take collagen daily because I  think for me it helps keep my joints healthy and helps keep my skin clear and I seriously notice a difference in my nails when I take it versus when I don’t. I love Further Food because it’s grass-fed and a woman-run company. This new chocolate flavor is going to be on repeat over here.

Ingredients

1 cup mashed cooked sweet potato
1 egg
1/4 cup unsweetened almond milk
2 tablespoon coconut flour
1 teaspoon cinnamon

Instructions

  1. Mix it all together with a hand mixer or immersion blender.
  2. Spray a waffle maker and add the batter in, bake for 10 mins and ignore the green light on the top.
  3. Topped with chocolate chips and peanut butter.
