These babies are the best and make for an excellent light snack or an impressive side dish. It is amazing how simple it is to make these and how little ingredients are needed to make it. This is definitely the more healthy and clean way to eat french fries if you are craving them, rather than going to a fast food joint. Sweet potatoes also have many health benefits so this is a really fun way to eat them!

Gotta love healthy fries! Sweet potatoes are full of fiber and vitamin A/betacarotene which is a powerful antioxidant that can protect your eye site and prevent disease. The fiber will keep you full and the sweet mild flavor mixed with the sea salt will quench any craving. If you want to add a bit more sweetness I recommend swapping your oil for coconut oil, it makes these a sweet treat! I love fiber rich snacks and healthy side dishes!

Sweet Potato Shoestring Curly Fries

Ingredients

1-2 sweet potatoes
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil

Instructions

1. Preheat the oven to 400 degrees F.
2. With a spiralizer, spiralize the sweet potatoes. If you don’t have a Spiralizer, you can just cut them into strips.
3. Place the fries on to a cooking sheet and space them out evenly.
4. Coat each fry with olive oil and then sprinkle with salt and pepper.
5. Cook until crispy for about 15 minutes. Keep an eye on them.
6. Remove from the cooking sheet and they are ready to be served and indulge!

    I made these the other night and they turned out absolutely delicious! Though it was difficult to get them cooked evenly due to the skinniness, I loved the contrasting crunchy and chewy textures. Thanks for a new use for my spiralizer!
