Feeling EGG-stra with this epic WAFFLE SAMMIE, but I’m not YOLKing around when it comes to my weekend waffles!

If you haven’t noticed, Paleo Sweet Potato Waffles are a staple in my kitchen, and I’m not mad about it one bit! A weekend isn’t complete without some loaded, fluffy, clean ingredient, tasty WAFFLES!!

Enjoying them savory-style took it to a whole new level too! I got to enjoy some quality time with my bestie yesterday and I’m feeling very grateful!

Sweet potatoes are a great source of fiber, vitamins, and minerals. They also promote gut health; the fiber and antioxidants in sweet potatoes are advantageous to gut health. They may also support healthy vision and your immune system.

Sweet Potato Waffle (Paleo)

Ingredients

1 small or 1/2 large sweet potato mashed (can microwave or bake) ⁣

2 tablespoon almond flour⁣

2 tablespoon coconut flour ⁣

1 scoop of Further Food Collagen

2 eggs⁣

1/2 teaspoon baking soda⁣

1 teaspoon cinnamon ⁣

Sprinkle of nutmeg⁣

2 tbsp almond milk⁣

Instructions

  1. Mix all ingredients with hand mixer or blender.
  2. Cook on waffle iron for 10-12 min.
  3. Load how with whatever you want! I sautéed kale to get it nice and crispy, added avocado, hot sauce, a sunny-side up egg, and ETBTB seasoning! ⁣⁣
  4. ENJOY!
