This recipe all starts by simply boiling your potatoes to perfection, letting them cool and then halving them so the inside can soak in all the flavor and sauce goodness.

Ingredients

3 pounds of white baby potatoes, boiled till soft, cooled and halved
2 tablespoons olive oil
3 tablespoons capers
2 tablespoons dill paste or fresh dill
a few sprigs of fresh oregano
2 heaped tablespoons vegan mayo
1 tablespoon dijon mustard
1 teaspoon garlic powder
½ teaspoon salt
1 tablespoon lemon juice
½ teaspoon fresh black pepper

Instructions

  1. Boil your potatoes till soft, strained, cool and halve.
  2. Add all your ingredients into a bowl.
  3. Stir until well combined!
  4. Garnish with fresh oregano
  5. Enjoy!
