Ok ok it’s here! The world’s healthiest pizza. This recipe pizza one of the key recipe in my Keto Connector program because yes pizza can be healthy!

100% guilt free pizza. Pizza that will make you say “Yum” and “Wow! I can eat this all the time!”

I have been working on this post for 2 weeks now.  First, I created the zucchini cheese and then moved on to the pizza crust. The later is what was the most difficult for me. I tested this pizza cauliflower crust recipe multiple times to find the “crispiest” version. Yup, I nailed it!

First and foremost, we should forgo all the heavily processed carbohydrates that taste great for a second on the tongue;but leave us feeling heavy, weighted down, and down right lethargic afterwards. The same goes for the dairy-filled cheese that makes us crave more pizza.

Food should not only taste great, but it’s gotta make us feel great! I don't think that world's healthiest pizza is an understatement! Dairy-free and gluten-free, this is a rare pizza. Cauliflower is a great substitute for the classic crust here as it can get nice and crispy and it is full of vitamins and minerals. Just 1 cup of this cruciferous vegetable has 77% of your daily vitamin C intake, to keep your immune system healthy, and 20% of your daily vitamin K intake, which is important for your blood's ability to clot in case of a cut. Cauliflower is also high in potassium, folate, vitamin B6, and manganese for a well rounded nutrition.

The World Healthiest Pizza

  • Prep Time:30 minutes
  • Cook Time:30 minutes
  • Servings: 4

Ingredients

1 medium sized head of cauliflower – 3-4 cups of cauliflower rice
1/2 teaspoon sea salt
1/2 teaspoon basil dried or 2 teaspoon fresh finely chopped
1/2 teaspoon dried oregano or 2 teaspoon fresh finely chopped
1/2 teaspoon dried thyme or 2 teaspoon fresh finely chopped
1/2 teaspoon garlic powder or 1 glove fresh finely chopped
2 tablespoon almond flour
1 tablespoon (or more if desired) nutritional yeast (you could also omit this entirely if you like)
1 tablespoon olive oil
1 pasture raised egg

Instructions

  1. Preheat oven at 400 F.
  2. Place parchment paper on a baking sheet and grease with healthy fat such as coconut oil or butter (this will ensure the crust is crispy through the cooking process).
  3. Shred the cauliflower using a grater or pulse it in a food processor. The consistency and size should be like rice.You need 3-4 full cups of cauliflower “rice”.
  4. Transfer the cauliflower rice to a microwave-safe bowl and microwave, covered with a cloth, for 4 minutes. Let your cauliflower cool completely.
  5. Using cheese cloth or clean kitchen towel, squeeze all excess moisture left in the cauliflower rice. This step is crucial to ensure you have a dry pizza crust!
  6. In a medium size bowl mix your cauliflower with the egg, olive oil, almond flour and spices and salt. Mix well.
  7. Place 1 heaping ball of your mixture on your parchment paper- depending on if you want 1 double size pizza or 2 individual pizzas.
  8. Press out by hand and mold your pizza around 1/4“ thick to the form of your liking while keeping the thickness to 1/4” max.
  9. Bake approximately 20 minutes. The crust should be firm, and golden brown when finished.
  10. I find the discrepancy on baking time really depends on your oven and how wet your cauliflower is when you mix it.
  11. Remove from oven. Add your sauce and toppings.
  12. Return to the oven for 5 minutes at broil or longer based on topping(s) used.
  13. Enjoy immediately or keep in fridge for 2-3 days.
