Hope ya’ll have an extra NICE day. This turmeric chia pudding with mango “nice” cream is so delicious, creamy and easy to make. This recipe is my new favorite! The “nice” cream is made entirely out of fruit rather than dairy products. This recipe will definitely make you feel like you are somewhere tropical.

This Turmeric Chia Pudding with Mango Nice Cream is light and refreshing but will keep you feeling full and satisfied. Chia seeds are loaded with soluble fiber which slows the absorption of food. Plus thanks to the Collagen peptides, each serving has 8g of protein!

Ingredients

For the Chia Pudding:
2 Tablespoons of chia seeds
1 teaspoon Further Food Superfood Turmeric
1/4 cup flax milk

For the fruit layer:
Pineapple
Kiwi

For the Nice Cream:
2 cups frozen mango
1 scoop Further Food Collagen
splash coconut water
Garnish with coconut chips

Instructions

  1. For the chia pudding layer: mix chia seeds, Further Food Turmeric, and flax milk together and let sit for 1-2 hours or overnight.
  2. For the Nice Cream layer: add mango, Further Food Collagen and coconut water to a blender; blend until smooth
  3. Assemble: add chia pudding to the bottom, add a layer of fruit, next layer the “nice” cream, top with coconut chip
