Granny smith apples among the lower-sugar fruits you can eat, and are loaded with fiber and phytonutrients, which can help to reduce blood sugar levels and inflammation. Turmeric Collagen Baked Apple Fritters

  • Servings: 6 fritters

Ingredients

1 Granny Smith Apple, cut into small pieces (a whole small apple or half a large one will be fine.)
2 Large Eggs
¼ cup Califia Farms Vanilla Almond Milk
⅓ cup Pure Maple Syrup
½ cup Unsweetened Apple Sauce
1 teaspoon Pure Vanilla Extract
1 ½ tablespoon Coconut Sugar
3 scoops Further Food Collagen Peptides
1 ½ cups Namaste Foods Gluten Free Flour Blend 
¼ cup Coconut Flour
1 teaspoon Cinnamon
1 teaspoon Turmeric
2 teaspoons Baking Powder
Extra Cinnamon to sprinkle on top
Raw Honey (to drizzle on top)

Instructions

  1. Pre-heat oven to 375 degrees. Grease a muffin tin with coconut oil spray or canola oil spray. Set aside.
  2. Cut up granny smith apple and place in a bowl. Sprinkle with some cinnamon and drizzle with honey. Let sit for a few minutes while preparing the other ingredients.
  3. In a mixer or large bowl, add eggs, almond milk, maple syrup, apple sauce & vanilla. Mix until well combined.
  4. Add in coconut sugar and collagen peptides. Mix until both are dissolved.
  5. Add in honey-cinnamon apple pieces, gluten free flour, coconut flour, cinnamon, turmeric and baking powder. Let mixer go for a few minutes until a thick dough is formed.
  6. With an ice cream scooper, place heaping scoops of batter into greased muffin tin. Shake the muffin tin to let the dough settle a little.
  7. Sprinkle cinnamon on top and drizzle some raw honey.
  8. Bake at 375 for 20- 22 minutes. Edges will turn golden brown when finished. They should pull apart easily and have a fluffy and doughy consistency.
