This Turmeric Lemon Chicken is the perfect weeknight dinner! Super easy to make and also super flavorful!

There can be so many calories, sodium and sugars in what we season our food with, believe it or not. But, eating healthy doesn’t mean eating without flavor! Lemon juice/zest is an AMAZING  thing to season your food with. It can freshen up the flavor profile of so many dishes. Meats, veggies, salads, you name it! Another thing I love seasoning meats and veggies with is turmeric! It’s soo flavorful and has so many health benefits.

Turmeric has been touted as a super food with many health benefits to it. Curcumin is the main active ingredient in turmeric. It has powerful anti-inflammatory effects and is a very strong antioxidant. For a tiny little spice it is extremely healthy and a great remedy for many illnesses. Research has found that consuming black pepper with curcumin increases its bioavailability, allowing your body to absorb it into the bloodstream better.

I combined both of those healthier flavoring agents in this very recipe! Enjoy!

Turmeric Lemon Chicken

  • Prep Time: 20 Minutes
  • Cook Time: 30 Minutes
  • Servings: 4

Ingredients

1lb thin chicken cutlets

1/4 cup ghee butter or coconut oil (melted)

1/4 teaspoon sea salt

1/4 teaspoon cumin

1/4 teaspoon cayenne

1 tablespoon ground turmeric or Further Food Superfood Turmeric

1/2 teaspoon ground black pepper

1/2 teaspoon paprika

1 teaspoon grated ginger and cinnamon

1 lemon

Instructions

  1. Preheat oven to 400 degrees F and line a large baking sheet with parchment paper.

  2. Place chicken breasts in a single layer.

  3. In a bowl, combine your melted butter with all of the spices and seasonings. Add in half of a lemon’s juice and whisk together to create your spice mixture.

  4. Brush the spice mixture all over the chicken cutlets on both sides. Use your hands to press the spices gently into the chicken (don’t forget to wash your hands!)

  5. Bake in the oven for about 20-25 minutes. Half way into the cooking squeeze the rest of your fresh lemon juice all over the chicken.

  6. Remove the chicken, set aside and prepare your toppings or pairings.

  7. Top with spinach, sliced blanched almonds and fresh lemon slices.
