I found myself buying these expensive snacks and wanted to recreate the same recipe without having to break the bank and drive to the store every time I wanted them. They are a perfect anytime snack alone or great to add to a homemade trail mix. I like to eat them with sprouted walnuts for fiber, omega 3 and mct packed brain treat midday! It’s paleo, gluten- free, dairy free, vegan.

Vanilla Maple Coconut Strips are a delicious take on "coconut chips." They are a great alternative to potato or corn chips if you are looking for a crunch and come with 2 g fiber per serving! Coconut is known for having "good fats" and helping to raise our "good" HDL cholesterol which is known to reduce our risk for heart disease. What I love about these coconut strips is that they are great by themselves or added to yogurt or even with fruit!

Vanilla Maple Coconut Strips (Gluten-Free, Low Carb, Vegan)

Ingredients

1 cup unsweetened large flake coconut
1 tablespoon organic pure vanilla extract
1 tablespoon pure maple syrup

Instructions

  1. Pre heat oven to 375F
  2. Spray non stick cooking pan or lay down tin foil and spray with non stick cooking spray
  3. Mix all ingredients until coconut is fully covered and wet (it will not be soaked but it will be wet)
  4. Lay out flat on a pan and bake until brown. Turn coconut halfway to brown all sides.
  5. Store in an airtight container
