I love to eat veggie chips, particularly when they contain portobello mushrooms, zucchini, kale, sweet potatoes ! It's great that low fat healthy chips can substitute for regular potato chips. These chips are cooked in the oven at a high temperature with very little oils and salt. These chips are a excellent snack option !

Ingredients

Your choice of portobello mushrooms, zucchini, kale, sweet potatoes (any amount)
Olive oil
Salt
Pepper

Instructions

1. Preheat oven 400 degrees.
2. Slice your veggies very thin.
3. Season them with a little olive oil, salt and pepper and bake them in the oven for 12 minutes (watch to make sure they don’t burn and turn over halfway)

You’ll end up with a big bowl full of salty, crunchy, healthy chips!

      Dee: We usually bake around 400. Just monitor the veggies and remove when they are done. Enjoy!
