This Veggie Pizza Omelette makes for the perfect easy breakfast or lunch!

I had some spinach, tomatoes and mushrooms in the fridge so I decided the throw it all together in this pizza omelette. You can use any veggies you have on hand, add some salt, pepper and turmeric and you won’t be disappointed!

Bonus points if you add feta cheese but try not to skip the turmeric because it gives a really nice golden color and flavor. Not only that, turmeric is really good for you! I paired this delicious egg creation with a simple arugula salad (tossed with lemon juice and a touch of EVOO), grilled halloumi cheese and of course avocado!

Ingredients

3 eggs

1/2 teaspoon Further Food Superfood Turmeric

4 tablespoons crumbled feta cheese

4 mushrooms, diced

Handful of cherry tomatoes, diced

Shredded spinach

Salt and pepper to taste
