Ingredients

2 Zucchinis, spiralized
1/4 Fennel, shave with a mandolin or thinly with a knife
1/2 cup snap peas, slices lengthwise
2 Radishes, shave with a mandolin or thinly with a knife
1/3 cup pumpkin seeds
2 tablespoons pesto (homemade or jarred)
Smoked Salmon – optional

 

Instructions

  1. Toss together spiralized zucchini, fennel, snap peas and radishes.
  2. Toss mixture with pesto and then top with pumpkin seeds.
  3. Feel free to add some smoked salmon for a more satiating meal.
