This protein bread is perfect for toast or a sandwich. The Further Food Collagen Peptides add no taste, but lots of health benefits including improved joint and gut health. Just one scoop of the collagen provides an additional 7 grams of protein. It’s a filling and nutritious bread that I eat for breakfast or snack.

Often I top it with eggs and veggies for a delicious, complete meal.

At just 21 calories per cup, zucchini is a great source of the antioxidant rich vitamin C, which is needed to help protect thr body against free radicals and help metabolize cholesterol. In addition, one obtains an excellent amount of vitamin K and manganese, which plays a role in reversing the effect of ‘blood thinning’ medications, so be careful if you are taking them. Albeit small, pumpkin seeds are nutrition powerhouses, providing manganese, copper, protein and zinc to one's meals. They also contain phytosterols, plant compounds and free radical scavenging antioxidants.

Ingredients

1 zucchini, grated
1/4 cup of unflavored protein powder
1 scoop of Further Food Collagen Peptides
1/4 cup psyllium husk
salt & pepper to taste
1/3 cup pumpkin seeds
6 egg whites

Instructions

  1. In a bowl, mix together 1 grated zucchini, 1+1/4 cup of unflavored protein powder, 1 scoop of Further Food Collagen Peptides, 1/4 cup psyllium, salt & pepper, and some pumpkin seeds (1 scoop).
  2. In an other bowl, whisk 6 eggs whites with an electric mixer.
  3. Mix the two mixtures together and gently.
  4. Put in a cake dish and cook to 180°C (350F) for 20 minutes.
