I love having Chia Pudding at least twice a week, chia seeds are a great source of protein and excellent gluten-free breakfast choice. You can top it with anything you like, I like topping mine with different fruits every time. Adding Matcha tea to the pudding gives you energy throughout the day.

Ingredients

1/2 cup chia seeds
1 cup almond milk
2 drops Vanilla extract
1 teaspoon Mindful Matcha

Toppings:
Raw granola
Coconut flakes
Goji berries
Bananas
Honey

Instructions

  1. Mix mindful matcha, chia seeds, almond milk, and vanilla extract.
  2. Leave over night in the fridge.
  3. In the morning, add mixture to a bowl, then add your toppings.
  4. Enjoy!

    Adding matcha is so smart. I’ve been using vanilla extract and the extra matcha gives it such a flavor boost!

    Consider adding red beans (cooked) for delicious treat.
