Anti-Inflammatory Carrot Lentil Turmeric Soup
Supefood Turmeric soup recipe
- Soup1 tablespoon coconut oil (or olive oil)
- 1 large onion, minced3 carrots, peeled and chopped into 1″ chunks
- 1 sweet potato, peeled and chopped into 1″ chunks
4 teaspoons Superfood Turmeric
- 1/2 teaspoon cayenne pepper
- 1 cup red lentils
- 6 cups vegetable broth
- juice from 1/2 lemon
- pumpkin seeds
In a large pot, heat the coconut oil over medium-high.
Add the onions, carrots and sweet potato.
Cook, stirring constantly, for 10 minutes, or until just beginning to brown, then add the Superfood Turmeric and cayenne and cook for 2 more minutes, or until spices are fragrant.
Add lentils and broth and bring to a boil. Reduce to heat to low and simmer, covered, for 40 minutes or until sweet potatoes are tender and lentils are cooked.
Pulse in food processor or blender until ingredients are combined but soup still has texture.
To serve, add lemon juice atop the soup and add in the toppings you desire.
