Directions
Preheat over 350degrees F
In a mixing bowl, whisk together flour, collagen, salt, baking powder, baking soda and cinnamon.
In a separate bowl, add eggs, oil, pumpkin puree, white sugar, brown sugar, vanilla extract and melted butter. Mix until smooth.
Combine wet and dry ingredients and mix until smooth.
Line a 9x9 baking sheet with parchment paper. Pour cake batter in and smooth evenly.
Bake for 30-40 minutes. You can tell it’s done by placing a toothpick in center-if it comes out clean, it’s done.
While the cake is baking start on the cream cheese frosting. Simply mix cream cheese and butter using the whisk attachment of a stand or hand mixer.
Add powdered sugar and salt and mix until smooth.
Add vanilla and mix again.
Once cake is done, let it cool completely before frosting. Cut into 9 squares.
