Hemp seeds are a wonderful source of protein as well as omega 3 fatty acids, which can help tame inflammation. This is a wonderful, low-fat and high fiber recipe that will be satisfying as well as nutrient dense. Nori has even been known to be a source of vitamin B12 – an important nutrient for brain and nerve function that is hard to find in vegan diets.

Ingredients

2-3 cups shredded organic lettuce
1 avocado
1 teaspoon hemp seeds
1 nori sheet, in little pieces
1 small cubed jicama

Add in: spices, lime juice, sea salt or cherry tomatoes (optional)

Instructions

  1. Mash avocado in lettuce until lettuce is covered.
  2. Add cubed jicama, nori and mix well.
  3. Serve in bowl and add hemp seeds on top. Squeeze a lime if desired or add some spices to taste for extra flavor.
