Coconut Almond Oat-Free Protein Power Balls

This recipe is both paleo and relatively low-histamine, a diet which I keep to ward off migraines. Most power ball recipes use oats and/or dates as both a binding agent and for a bit of fiber, but I personally can’t tolerate oats and dates are incredibly high in histamine. So I’ve configured this recipe to be dense enough to form a ball and delicious enough so that it doesn’t seem as if it’s missing a little somethin’ somethin’.

As an alternative to classic peanut butter, almond butter contains a higher amount of essential fatty acids and contains the healthy unsaturated fats. Almond butter also contains water and fat soluble vitamins, which are needed to replenish the bodies' function and can aid in growth and development. 1 tablespoon of almond butter consists of 100 calories, 10 g fat, 1 g saturated fat, 0 mg cholesterol, 0 mg sodium, 4 g carbohydrates, 1 g dietary fiber and 2 g protein.

Coconut Almond Oat-Free Protein Power Balls

Ingredients

1/2 cup almonds
1/4 cup shredded coconut
1 scoop Further Food Collagen Peptides
3/4 cup almond butter
1/4 cup maple syrup
1/4 cup carob chips

Instructions

  1. Place the almonds in a food processor and blend until finely chopped
  2. Add the coconut and protein powder into food processor and blend well
  3. Add the almond butter, maple syrup and carob chips to food processor and blend until well combined
  4. Scoop out a tablespoon of the mixture and roll around in your palm to make a ball
  5. Keep in refrigerator for up to 3 days
