Quick Crockpot Sweet and Sour Pork

This quick crockpot sweet and sour pork is an especially easy crock pot meal, as it doesn’t require any precooking and contains a nice dose of fruit and vegetables right in with the meat. The marinade doesn’t even need to be stirred before it’s added to the crock pot, so dinner can come together in a flash.

I based this one off a few versions of the dish I found online. Most called for traditional white and brown sugar, but I used palm sugar in lieu of the brown. While I prefer palm for its lower glycemic index, I also love the way its flavor works in Asian-inspired recipes.

This recipe would work with chicken as well, but I do think the pork and pineapple really compliment each other well.

As written this dish is gluten and dairy-free.

Skip the takeout, and let your crockpot take care of homemade sweet and sour pork. One cup of red bell pepper, green bell pepper and pineapple provide roughly 300%, 200% and 100% of your recommended daily vitamin C, respectively -- a nutrient that helps your body absorb iron from the protein-packed lean pork tenderloin. This stoplight trio also provides vitamin A, fiber, a great deal of health-promoting antioxidants, and gives the dish loads of color!

Notes: As the name suggests, this is not a low-sugar dish. To cut down on a small amount without compromising the nature of recipe, use fresh or thawed frozen pineapple chunks. Alternatively, look for canned pineapple in water. If you can only find pineapple canned in syrup, rinse it under cool water in a colander to remove as much of the excess sugar as possible.

Ingredients

1/2 cup organic sugar
1/2 cup packed palm sugar
1/2 cup water
1/3 cup apple cider vinegar
juice of 1/2 lemon
1/4 cup gluten-free soy sauce
3 tablespoon tomato paste
1 teaspoon garlic powder
1/4 teaspoon ground ginger
1/4 teaspoon ground white or black pepper
1 1/2 pound boneless pork loin chops, cut into 1-inch cubes
1 large onion, cut into 1 inch pieces
1 large green pepper, cut into 1 inch pieces
1 large orange or red bell pepper, cut into 1 inch piece
1 cup pineapple chunks
1 cup water
3 tablespoon arrowroot or cornstarch
minced cilantro, for garnish (optional)

Instructions

1. Combine all ingredients through pepper in a crock pot. Stir to blend. Add in pork, onion, peppers and pineapple. Stir to coat.

2. Cover and cook on low for 6-8 hours.

3. Stir starch into 1 cup water until dissolved. Pour mixture into crock pot and stir. Recover and cook for an additional 15 minutes on low or until sauce thickens.

4. Garnish with cilantro (if using) before serving.
