Energy Hot Cocoa with Chia & Flax

Inspired by the Mexican corn drink, pinole, I came up with this warm and cozy drink for the colder months. Pinole is cornmeal whisked into hot water and sweetened with cane sugar, but I wanted a “lightened up” and more healthy version. I substituted the cornmeal with ground lentils, chia, and flax seeds!  Lentils add protein, chia and flax seeds act as a thickener and add healthy fats, and it’s lightly sweetened with stevia and honey.

For a drink that is notoriously sweet and indulgent, this recipe provides that same rich hot chocolate flavor but with ingredients that will fuel your body instead of damage it. I particularly like the use of chia seeds because they are a great source of iron and protein. In combination with flaxseeds and lentils, the fat and carbohydrate content is a duet of omega 3 fatty acids, essential for brain health, and fiber, to keep your blood sugar levels under control.

Energy Hot Cocoa with Chia & Flax

Ingredients

1 teaspoon chia seeds

1 teaspoon flaxseed

2 teaspoons dry red split lentils

1 1/2 cups water

1 tablespoon unsweetened cocoa powder or Further Food Chocolate Collagen

1/4 teaspoon stevia

1/2 teaspoon honey

dash salt

dash cinnamon

Instructions

  1. In a small grinder combine chia seeds, flax seeds and lentils. Grind into a fine powder.
  2. Heat water in a small saucepan over high heat, until barely warmed, about 1 minute. Reduce heat to medium and quickly whisk in the seed powder and cocoa.
  3. Keep whisking to ensure that no lumps form.
  4. When mixture has slightly thickened, add the remaining ingredients.
  5. Reduce heat to low and simmer, whisking continually. When the mixture has thickened, remove from heat and let cool slightly before serving.
