Rolled in shredded coconut these snowball look-a-likes are pillows of lemony heaven! A few simple ingredients and you can make a batch of these in no time. Perfect for post workout fuel or pre-workout energy, these power bites are the ultimate raw food snack. Dates, lemon juice, oats, coconut and nuts combine to give you a citrus sweet bite. These little bites are a concentrated source of energy that provide a balance of protein, fiber and healthy fats, plus iron, B vitamins and electrolyte nutrients, keeping you satisfied and your body running smoothly. Note: Ensure oats are certified gluten-free, if needed. If you're following a diabetic diet or simply watching sugar intake, opt for old-fashioned oats instead of instant/quick-cooking -- the former are less processed and provide more slow-releasing, longer-sustaining energy with a slightly lesser effect on blood sugar levels.

Lemon Coconut Power-Bites (raw, vegan, gluten-free)

Ingredients

½ cup of cashews (soaked 10-20 minutes)
½ cup of almonds (soaked 10-20 minutes)
½ cup of unsweetened shredded coconut flakes (plus more for dusting at the end)
½ cup of old fashioned or quick cook oats
10-12 pitted dates (soaked 10-20 minutes and roughly chopped)
1 tablespoon coconut oil
1 lemon (zested and juiced)

Instructions

2. Place the nuts, oatmeal and coconut flakes in a food processor and pulse on high until well combined and processed.
3. Add in the dates a few at a time and pulse until ingredients are combined.
4. Finally add in the coconut oil and lemon zest and juice pulsing one last time. Mixture should come together easily and resemble a moist firm cookie dough batter*
5. Form dough into small golf ball size balls and place on a waxed paper lined, small cookie sheet.
6. Freeze bites for 10-12 minutes or until firm. Then place in a sealed container in the fridge and enjoy!

*If you need a little more moisture to hold it together add one tablespoon of water or lemon juice and pulse to combine. Remembering to scrape down the sides so everything is processed evenly.

    This recipe was absolutely delicious!!! It really didn’t take much time to prepare plus soaking the nuts in warm water made the process quicker. I’m a huge coconut lover so anything with coconut has my heart!
